Turkey Tetrazzini

Fall is here!

Today (Friday AM) I woke up to cool, crisp air and sunshine!  I love Fall days like this!  Can't wait to go to the park at some point today and ride our bikes (we now have helmets for the kids...I didn't realize that they are so expensive so we had to shop around first, we decided on Walmart!)

Last week I switched some meals around in my September calendar to fit what we already had in the house, and to fit what my mouth could handle (still struggling with root canal pain).  I decided on adding some healthy meals from the Healthy Family Meal book I got from the library (click here to check out that post).

Here is a new recipe I added, it was an involved meal (kind of like a shepherd's pie type meal with lots of different things going on but all ending up in the same dish for baking at the end) but the kids LOVED it and so did John and I, so it will definitely be used again, probably in November!

Turkey  Tetrazzini

Ingredients:
4 ounces dried whole-wheat spaghetti
2 tsp olive oil
1/2 cup chopped onion
8 ounces of zucchini cut crosswise in 1/4 inch slices...about 2 cups
2 garlic cloves chopped
1/4 tsp nutmeg
1/4 tsp pepper
1 10 ounce can low fat condensed cream of mushroom soup
2/3 cup fat free milk
12 ounces of turkey meat cut into cubes (1 turkey breast)
1/4 cup panko
1 tbsp grated Parmesan cheese

Directions:

1. Preheat oven to 350, spray square 8 inch pan with cooking spray.
2. Prepare pasta according to the package directions and strain and set aside.
3. Heat a large skillet over medium heat for 2 minutes.  Add oil, and onion for about 3 min until it softens.
4. Stir in the zucchini and cook for 3 min.  Sprinkle with garlic, nutmeg, and pepper, keep stirring and cook for 2 more minutes.
5. Stir in soup and milk and bring to a simmer.  Simmer for 3 minutes and then remove from heat.
6. Stir in turkey and pasta, and spoon into the baking pan.
7.  In a small bowl stir together the panko and parmesan and sprinkle over the pasta dish.  Lightly spray the top with cooking spray.

Bake for 25 minutes, or until the pasta is bubbly and the top is browned!
