Salad Week

Confession # 1: I am a carbaholic :)

Confession #2: I am guilty of not eating enough veggies.

Confession #3: I care more about my children's/husband's diet than my own, which sometimes means I don't sit down for meals, I skip meals, I eat on the run, and I don't watch what I eat.

All this to say that even though I weigh 125lbs (125.6 to be exact) I still could be a healthier eater, but sometimes tyranny of the urgent and caring for everyone else means Mommy gets taken care of last, and that is NOT GOOD!  So last night I announced that this week is salad week!  And actually my kids LOVE salads and John is always happy to eat healthy so Salad Week it is!  My fridge has lettuce, dressings, carrots, feta, Craisins, peppers and tomatoes, but I still need to hit up the farmers market for some cucumbers (or as Julia and Mark call them "coupons"), strawberries, mango, and almonds.

Monday: Pasta Salad (ok, so I had to have a carb today to ease me in slowly :)) We will have swirly noodles with craisins, carrots, tomatoes, feta cheese and italian dressing with red leaf lettuce.

Tuesday: Black Bean Mango Salad, 1 can of black beans mixed in with red leaf lettuce, chopped red onion, mango, tomatoes, and cheddar cheese with a Balsamic dressing.

Wednesday: Grilled Chicken Salad, Red leaf lettuce, grilled chicken, tomatoes, carrots, cucumbers, and grated Parmesan cheese with creamy italian dressing.

Thursday: Strawberry and Almond Salad, Red leaf lettuce with chopped strawberries, roasted almonds and balsamic dressing.  We will have Salmon on the side for some protein.

Friday: Yummy Oriental Salad, Lettuce, Oriental noodles, tomatoes, cucumbers, carrots, and a citrusy dressing.
Chicken Soup on the side.

  2. YUm, sounds so good! I've been trying to eat healthier and lose a few pounds, and it's definitely a challenge. I'm a huge carbaholic too. =) It's hard to cut back on things like bread and pasta, but when you replace them with fresh fruits and veggies that taste SO good it makes it a little easier!
