Vegetarian Pasta Salad



I hope you had a wonderful Easter!  I had all my family over yesterday and we had such a great time!  I hope to post some pictures this week.  I served lunch after church and this was one of my dishes on the side!  Everyone loved it, including me!  There's nothing like a flavorful pasta salad!!!  Enjoy!



Pasta Salad: with feta, garlic, and black olives

Ingredients:
1 1/2 lb cherry tomatoes, quartered
1 small red onion, finely sliced
1 clove garlic, finely chopped
8 oz feta cheese
1/3 cup extra virgin olive oil
1 tbsp finely chopped basil
1 tbsp finely chopped mint 
grated zest of 1 lemon
salt and pepper
1 lb of penne pasta
1 cup of pitted black olives

Directions:

1. Place tomatoes, onion, garlic, feta, oil, basil, mint, and lemon zest in a large salad bowl.  Toss well and season with salt and pepper.  Let rest for 30 minutes.

2. Cook the pasta in a large pot of salted water until al dente.  Drain well and let cool under cold water. 

3. Add pasta to the bowl with the tomatoe and cheese mixture.  Add olives and toss well.  Garnish with basil and serve.
