Well, I have been trying to be very effective in the kitchen lately and so I have been cooking a big bulky meal at the beginning of the week that lasts us through to at least Wednesday or Thursday before I have to cook "BIG" again.
I have NOT been following my monthly plan idea for this month of November. Partly because it just wasn't inspiring me, and also because I've been trying to shop less at the grocery store and have been trying to use up ingredients that are simply hanging out in the fridge and pantry. At the beginning of the month John cleaned out our garden before the frost came (right after our first snow storm!) and he found the largest ZUCHINNI I have ever seen. I guess it just kept growing and growing and we had no idea it was there...so for a week I ignored it in the fridge, then finally I texted Suzette and said, "Suzie, what's the name of the website that you enter in the items you have on hand and they give you recipes?" SUPERCOOK.COM was the answer!
So I quickly entered in: Ziti, chicken breasts, mozzarella and since I knew I could throw in any veggie I wanted in a casserole type dish when I saw this Chicken Baked Ziti recipe I was thrilled!
Chicken Baked Ziti
Chicken Baked Ziti (with zuchini)
Ingredients:
1 16 oz box of ziti
1 jar of pasta sauce (10 oz or 14.5 or as much as you like)
1 bag of mozzarella cheese (3 cups)
2-3 chicken breasts
zuchini (as much as you like)
Directions:
1. preheat oven 350
2. boil pasta according to pckge directions
3. drain and pour into 13 by 9 baking dish
4. cut chicken breasts into bite size pieces (first cook your chicken breasts in a pan with the zucchini til they are cooked all the way through)
5. add chicken and cooked zuchini to the pasta
6. pour in the sauce and half the cheese
7. stir unitl well mixed
8. sprinkle remaining cheese on top
9. bake for 25-30 minutes
You will have leftovers for lunch and dinner the next day!!
This dish lasted us all week! Each night I just added an extra veggie or salad on the side! John even took it for lunch a few days.

Sounds great! I wish I could cook like this, my husband wont eat the same thing more than dinner and lunch the next day. Maybe some day, but that alone (lunch the next day) is an accomplishment for us.
ReplyDeleteI have been attempting to use up all of our pantry items as well. I now have an ultra clean freezer due to the winter storm and losing power for 7 days. That recipe looks great. I love veggies with pasta. Such a great pairing!
