Honey Barbecue Ham with Roasted Potatoes
Ham in Slow cooker/crock pot Recipe
Makes:12 Servings
Prep: 10 min
Cook: 5 min.
Slow cook:2 hours on high or 5 hours on Low
Ingredients:
1/2 cup ketchup
2 tbsp cider vinegar (you can skip if you don't have)
2 tbsp dark-brown sugar
1 tsp Worcestershire sauce
1 tsp plus 1 tbsp veg. oil
1/4 tsp dry mustard
3 1/2 lbs fully cooked boneless ham
3 lbs potatoes, cut into 1 inch pieces (red pot. always are my first choice)
1 tbsp chopped fresh parsley
1/2 tsp salt (or to your liking)
1/2 tsp pepper (or to your liking)
Directions:
1. In a small saucepan, stir ketchup, vinegar, sugar, Worcestershire. 1tsp oil and mustard. Bring to a simmer and cook for 5 minutes.
2. Score surface of ham, making diamond shapes 1/2 inch deep. Place ham in a 4-5 quart slow cooker and brush generously with the bbq sauce mixture you just made.
3. In a large bowl, stir together potatoes and remaining tbsp of veg. oil. Place potatoes around ham in slow cooker. Cook for 2 hours on high or 5 hours on low, brushing ham generously with sauce once every hour.
4. Remove ham from slow cooker and set aside. Stir parsley, salt and pepper into potatoes and serve with ham and remaining sauce.
