Recipe Swap--Cheesy Tortellini
Peas & Cheese Tortellini
I love making this for dinner because you can sneak in veggies!!! The recipe calls for peas, but since John isn't a huge fan of peas sometimes I use broccoli. My 2 year old daughter loves peas and anything with cheese, so this is a big hit with toddlers! If you don't have tortellini in the house, you can substitute it with any of your favorite pasta, or whatever pasta is hanging out in your pantry! I've also added cooked chicken breast to it for an added protein! My husband John is a believer in eating lots of protein.
Ingredients:
1lb frozen cheese tortellini (1lb of pasta)
1 cup of frozen peas (or broccoli, or whatever veggie)
5 scallions
2 tbsp flour
2 tbsp butter
1 2/3 cup milk
salt and pepper (of course!)
1/3 cup of grated Parmesan cheese
1. In a large saucepan of boiling salted water, cook the tortellini (or pasta) until al dente; drain.
2. Meanwhile, add the peas (veggie), butter and scallion whites to another large saucepan and cook over med. heat for 2 minutes. Whisk in the flour and cook, stirring, for 1 minute. Gradually whisk in the milk and bring to a boil, stirring constantly. Stir in the scallion greens and season with salt and pepper.
3. Stir the tortellini and 1/3 cup cheese into the sauce. Divide the pasta among 4 serving bowls and sprinkle with more cheese.
