White Bean Chicken Chili


1tbsp olive oil
1 cup chopped onion
2 tsp garlic
1 3/4 lbs chicken tenders cut into quarters
1 packet of taco seasoning mix
1 cup of water
1 can of artichoke hearts
1 can diced tomatoes or 1 cup of chopped tomatoes
1 can of white beans


1. Heat oil add onions and saute until soft

2. Add garlic, chicken, and a little of taco seasoning
cook until chicken is no longer pink

3. Stir in the remaining taco seasoning and water into the chicken mixture.

4. Bring to a boiling.  Add the artichoke hearts, tomatoes, and beans, simmer uncovered for 5 minutes.

*Garnish with fresh cilantro

I also make white/brown rice with this meal!
