Chicken Casablanca

Saturday I was in the mood to use my crock pot and I had some chicken to use up...so I found an awesome recipe I plan on using this Tuesday when I have the beans and the zuchini and fresh herbs.  We had Chicken Cacciatore in the crock pot.

Chicken Casablanca:

1 onion sliced
1 tsp fresh ginger grated
3 large carrots diced
2 cloves garlic minced
2 large potatoes, peeled and diced
1 medium zuchinni sliced
1 15 oz can of garbanzano beans
3 lbs boneless chicken breasts
1/2 tsp cumin
1/2 tsp tumeric
1/2 tsp salt
1/2 tsp pepper
1/4 tsp cinnamon
1/4 tsp cayenne pepper
1 14 oz can of chopped tomatoes
2 tbs. parsley
1 tbs cilantro


1. combine the first 8 ingredients in the crock pot.
2. in a small bowl add all the spices (except parsley and cilantro)
3. combine the spices in bowl and pour over the ingredients
4. add the chopped tomatoes
5. cover cook on low 8 hours or cook on high for 4 hours
6. stir in parsley and cilantro at the end

  3. Posts like this one about food always make me hungry. Someone should invent a system whereby you have a picture of the food on your computer and we can taste the food on our computer. Somewhat like those food replicators they have on Startrek.
