Turkey and Bean Chili
This recipe comes from the February 2010 REAL SIMPLE magazine (one of my FAV magazines, next to Martha Stewart's LIVING)
Serves: 4 People
Ingredients
1 tbsp olive oil
1 onion, chopped
1 green bell pepper, chopped
2 cloves of garlic, chopped
1/2 lb ground turkey (I use a 1 lb b/c we like meat!)
2 tbsp tomato paste
1 tsp ground cumin
2 tsp chili powder
1 28 oz can diced tomatoes (I like to add cherry tomatoes too)
2 15 oz cans kidney beans, rinsed
salt and pepper
Directions:
1. Heat the oil in a large saucepan over med high heat. Add onion, bell pepper and garlic and cook, until tender about 4-6 min.
2. Add turkey meat and cook, breaking up with spoon until no longer pink, 3-5 min. Stir in tomato paste, cumin, and chili pepper and cook for about 1 more min.
3. Add tomatoes (with juices) the beans, 1/2 cup of water (I actually ended up adding a full cup of water) 1 1/4 tsp salt and 1/4 tsp pepper and bring to a boil. Reduce heat and simmer, stirring occasionally, until slightly thickened 12-15 min.
I serve my chili with white rice, crusty white bread, and cheddar cheese on top!!!

Chilli is so good I usually have to make the meat separate because I'm a vegetarian but it's so easy to make and so good...who doesn't love chilli! Thanks for sharing! Hope you had a great week!
