Saturday Recipe Swap--Chicken Noodle Soup w/Sweet Potatoes
My family and I on New Year's Eve (Julia's 2nd birthday).
Crock Pot Recipe!
This is actually because John suggested I try this recipe...and I did on Monday...and it was delicious!!! Be sure to have a few extra cans of broth in the pantry because after a day or two of sitting in the fridge the sweet potatoes absorb most of the broth and each time we had a bowl (throughout the week it made for great a great quick lunch) we added another can of broth...so yummmy!
Ingredients:
6-8 boneless, skinless chicken thighs cut into 1 inch pieces
2 sweet potatoes, peeled and diced
1 onion chopped
1 1/2 tsp salt
1/2 tsp dried thyme
1/4 tsp marjoram (this was the first time I used this spice!)
1/8 tsp pepper
1 bay leaf
1 14 1/2 oz can chicken broth (buy at least 2 extra)
8 oz egg noodles cooked separately
Directions:
1.Combine all but noodles in crock pot
2.cover
3.cook Low 8-10 hours
or cook High 4-5 hours
4.Stir in cooked egg noodles when you are ready to serve!!
Enjoy!!! The chicken literally falls off the bone...so good!
Italian bread will go well with this meal.
